Veggie Pizza




Happy Monday! What better day than for a pizza party!? :)

 I took these pictures way back when my blog was an idea rather than an actual website. I'm so happy I'm here...a blog that is an outlet for me, blogger friends who inspire me, and family and friends who encourage me.

My boyfriend and I were looking for something to eat one night but couldn't find anything we wanted to eat. I thought it would be a fun idea to whip up a quick pizza and load it with some veggies to make it healthier. This idea was on a whim so the picture quality is questionable... 

I started out with cutting up some vegetables that we had on hand: green pepper, red onions, and mushrooms. You can really customize what you like here! 



We opted to use refrigerated dough from the grocery store. You could be more adventurous and make your own or pick some fresh dough up from your grocery store. 

I rolled it out on a nonstick pan, topped it with some pizza sauce, and scattered some cheese. Don't put too much cheese on in this step because we'll add more later!



Then I scattered my veggies on top. 



My puppy aka our vacuum cleaner was with me every step of the way :)


Sprinkle your remaining cheese on top.


Here's my secret ingredient...White Truffle Oil. It is so tasty and adds such flavor to any dish! Drizzle a little on time! You'll smell it when your pizza bakes and you'll taste the rich flavor. 


Bake your pizza at 400 degrees for 8-10 minutes or until your edges are golden brown. 


This pizza serves 4-6 people. 

Veggie Pizza

Pizza dough
1 jar of Pizza sauce
1.5 cup of cheese (cheese of your choice!)
1/2 cup of green pepper
1/2 cup of red onion
1/2 cup of mushroom
White Truffle Oil

Preheat oven to 400 degrees.

Spread your dough out on a dark nonstick pan. Spread a layer of pizza sauce on top of pizza dough. Sprinkle half of your cheese on top. Chop up your vegetables and layer on top of cheese.

Sprinkle remaining cheese on top and drizzle with White Truffle Oil. Bake for 8-10 minutes or until edges are golden brown.

  2. So yummy! Homemade pizza is better than real pizza. Since i'm gluten free…Pillsbury has my favorite!

  3. I could eat pizza literally every day! It's actually on my menu for the week :) Oh, and I totally agree- truffle oil makes everything delicious! Great tip!!
